There is a Spanish series similar to Ospreys put out by Almena Ediciones, Madrid, called Guerreros y Batallas, which might be of use. There are volumes on Talavera, Albuera etc. There are some useful Portuguese books - I have some on the 1809 campaign from the Batalhas de Portugal series (Invasão do Norte 1809 from Tribuna da História, and Aqui não Passaram from Civização Editora). No doubt our Spanish colleagues will be able to help more.
