The English officer was John Humphrey Edward Hill.

I've got his main Bio in detail but the missing gap is his service in Portugal, and i'm searching for stories about the men from the Cacadores as well as the Brunswickers as he served with them too

Have you checked the "British Memoirs of the Napoleonic Wars"?

The section on British officers in Portuguese Service lists two sets of memoirs by officers in the 5th Cacadores.
