The data on French soldiers appears to have been their Fathers occupation rather than their own.
I have a book which includes data across the 18thC on the background of soldiers and how it changed with conscription.
I am fairly sure the book is
Scott, Samuel F., The Response of the Royal Army to the French Revolution, Oxford 1978

The main point I remember was that 80% of the population was rural, yet near all ancienne NCOs and the majority of the privates cam from urban areas.

WIth eduction being a requirement of NCOs it suggests a far higher literacy level among the ancienne army than after conscription; quite possibly a degredation in the average quality of manpower.
Which is the exact opposite of the romantic view of the liberating effects of the revolution.
